I had been planning to make non-baked cheesecake for my family as my father is a fan of raspberry cheesecake and it will be my first try out. My family members will be the genius pig to try out, wuhahah… (Must make sure the whole thing is eatable and stand by some medicine incase some of them need to kiss the toilet bowl) I had been searching online for the making process and make sure everything is prepared before I start the process. Raspberry Cheesecake Recipe
1) 400g Philadelphia Cream Cheese, softened
2) 50g of Butter or Margarine, softened
3) 200g Digestives Biscuits
4) 50g of Castor Sugar
5) 200ml Whipping Cream
6) 1 Box Jell-O Raspberry flavor
7) 1/2 Cup Hot Water
8) Raspberry Jam
Step
1) Put digestives biscuits into a plastic bag and crush it into crumbs. Put butter into plastic bag and mix well with the crumbs. (Optional: put the butter and digestive biscuits into a food processor and blend it until smooth and creamy)
2) Press the biscuits mixture evenly into a tin.
3) Stir Jell-O in hot water until it dissolve and leave it aside.
4) Whip the cream cheese and sugar together until smooth and creamy.
5) Fold in the whipping cream into cream cheese mixture.
6) Pour in Jell-O into cream cheese mixture and mixture well. Make sure no lumps in the mixture.
7) Pour the cream cheese mixture into the biscuits crust and refrigerate overnight.
8) Before serving, spread a layer of raspberry jam on top of it.
